  • Author: Ellie
  • Total Time: 2 hours 40 minutes (includes marinating time)
  • Yield: 4 servings 1x

Description

Jamaican Jerk Chicken is a flavorful, spicy dish marinated in a rich blend of herbs and spices. The combination of allspice, cayenne pepper, and cinnamon provides an authentic jerk flavor that’s balanced by the tang of vinegar and soy sauce. It’s perfect for grilling or roasting and makes a delicious, bold meal.

Ingredients

Scale
  • 4 chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 1/4 cup white vinegar
  • 2 tbsp brown sugar
  • 2 tbsp thyme
  • 1 tbsp ground allspice
  • 1 tbsp ground cinnamon
  • 1 tbsp cayenne pepper
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp ginger powder

Instructions

  • In a bowl, mix together soy sauce, olive oil, white vinegar, and brown sugar.
  • Add thyme, allspice, cinnamon, cayenne pepper, black pepper, garlic powder, and ginger powder to the mixture and stir to combine.
  • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken.
  • Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
  • Preheat your grill or oven. If grilling, cook the chicken over medium-high heat for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). If baking, preheat the oven to 375°F (190°C) and bake for 25-30 minutes, or until the chicken is fully cooked.
  • Serve hot with your favorite sides and enjoy the bold flavors of Jamaica!

Notes

  • You can adjust the cayenne pepper to make the chicken more or less spicy, depending on your preference.
  • If you don’t have a grill, you can also cook the chicken in a skillet over medium-high heat.
  • This marinade works great for other cuts of chicken, such as thighs or drumsticks.
