Ingredients

Scale

Meatloaf:

  • 2 lbs ground beef

  • 1 medium onion, finely chopped

  • 3 garlic cloves, minced

  • 2 large eggs

  • 3 tbsp fresh parsley, chopped

  • ¾ cup Panko breadcrumbs (or regular/gluten-free breadcrumbs)

  • ⅓ cup milk

  • 2 tbsp ketchup

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

Glaze:

  • ¾ cup ketchup

  • 2 tbsp brown sugar

  • 1 tsp mustard (Dijon or yellow)

Instructions

  • Preheat Oven and Prep Pan:
Preheat oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or foil.

  • Sauté Onions and Garlic:
Heat olive oil in a skillet over medium heat. Add onions and garlic; sauté until soft and translucent. Let cool slightly.

  • Mix Meatloaf:
In a large bowl, combine ground beef, sautéed onion and garlic, eggs, parsley, breadcrumbs, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix gently until just combined.

  • Shape and Bake:
Transfer mixture to prepared pan and shape into a loaf (~8 x 4 inches). Bake uncovered for 40 minutes.

  • Prepare Glaze:
Mix ketchup, brown sugar, and mustard in a small bowl.

  • Glaze and Finish Baking:
Spread glaze evenly over the meatloaf. Return to oven and bake another 20 minutes, or until internal temperature reaches 160°F (71°C).

  • Rest and Serve:
Let rest for 10 minutes before slicing.

Notes

Avoid overmixing to keep meatloaf tender.

Fresh herbs brighten flavor.

Use a meat thermometer to ensure perfect doneness.

Add grated carrots or zucchini for extra moisture and nutrition.

Can be made gluten-free with suitable breadcrumbs.

Great for sandwiches the next day.
