Instructions
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom and sides of individual tartlet pans.
- Bake at 350°F (175°C) for 10 minutes, then let the crusts cool completely.
- In a separate bowl, mix mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
- Spread a layer of raspberry jam over the cooled crust.
- Add a layer of the mascarpone mixture on top of the jam.
- Arrange fresh raspberries on top and sprinkle with chopped pistachios.
