  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/4 tsp salt
  • Mini chocolate chips
  • Whole pecans

Instructions

  • In a mixing bowl, cream together butter and powdered sugar until light and fluffy.
  • Stir in vanilla extract.
  • Gradually add flour, chopped pecans, and salt. Mix until well combined.
  • Shape dough into small balls and place on a baking sheet.
  • Flatten each ball slightly and use a toothpick to create the hedgehog’s spikes.
  • Place mini chocolate chips for eyes and a whole pecan for the nose on each cookie.
  • Bake at 350°F for 12-15 minutes or until lightly golden brown.
  • Allow to cool before serving.
