- 2 lbs beef stew meat, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 1 can diced tomatoes
- 4 cups beef broth
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the beef stew meat and brown on all sides, about 5-7 minutes.
- Add the chopped onion and garlic to the pot, and sauté until fragrant, about 2 minutes.
- Stir in the sliced carrots, diced potatoes, diced tomatoes, beef broth, thyme, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1-2 hours, or until the beef is tender.
