Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Make the cookie dough: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the egg, vanilla extract, and almond extract (if using), and beat until combined.
  • Gradually add the dry ingredients to the butter mixture, mixing just until combined. If the dough is too soft, chill it in the fridge for 15-20 minutes.
  • Shape the cookies: Roll out the dough on a lightly floured surface to about 1/4 inch thick. Use a heart-shaped cookie cutter to cut out the cookies. Place them on the prepared baking sheet.
  • Bake the cookies for 8-10 minutes or until the edges just begin to turn golden. Remove from the oven and let cool completely on a wire rack.
  • Make the icing: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Add food coloring until you reach the desired pink shade.
  • Decorate the cookies: Once the cookies are completely cool, drizzle or pipe the pink icing onto the cookies. Top with sprinkles for an extra touch of love!
  • Allow the icing to set before serving or storing.
