  • 2 medium sweet potatoes, peeled and cubed

  • 2 cups spinach or kale, chopped

  • 1 tbsp olive oil

  • 2 tbsp tomato paste or 1 cup diced tomatoes

  • ½ cup chicken or vegetable broth

  • 1 tsp paprika

  • ½ tsp thyme

  • ½ tsp cumin

  • Salt and pepper to taste

  • ½ cup shredded cheese (optional)


Instructions

  • Prepare Sweet Potatoes: Boil or steam sweet potatoes until fork-tender, then lightly mash.

  • Cook Turkey Mixture: In a skillet, heat olive oil. Sauté onion and garlic until translucent. Add ground turkey and cook until browned.

  • Add Veggies and Flavor: Stir in bell pepper, spinach, tomato paste (or tomatoes), broth, and seasonings. Simmer until slightly thickened.

  • Assemble: Layer turkey mixture in a casserole dish. Top with mashed sweet potatoes and shredded cheese if using.

 

  • Bake: Bake at 375°F (190°C) for 20–25 minutes or until golden and bubbly.
