For the cheesecake:

  • 1 1/2 cups Greek yogurt (full-fat or low-fat, depending on preference)
  • 16 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1/4 cup all-purpose flour

For the pomegranate syrup:

  • 1 cup pomegranate juice
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Instructions

For the cheesecake:

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a large bowl, combine Greek yogurt, softened cream cheese, and sugar. Mix until smooth and creamy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract, heavy cream, and flour. Mix until well combined.
  4. Pour the mixture into the prepared springform pan and smooth the top with a spatula.
  5. Bake for 50-60 minutes or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  6. Afterward, remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.

For the pomegranate syrup:

  1. In a small saucepan, combine pomegranate juice, sugar, and lemon juice.
  2. Bring to a simmer over medium heat, stirring occasionally. Let it cook for 10-15 minutes until it reduces to a thick syrup.
  3. Remove from heat and let it cool completely before drizzling over the cheesecake.
