  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1/2 cup crumbled feta cheese
  • Fresh chopped parsley for garnish

Instructions

  • In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, oregano, garlic powder, salt, and pepper. Mix until well combined.
  • Shape mixture into meatballs.
  • In a skillet, brown meatballs on all sides. Remove from skillet and set aside.
  • In the same skillet, add orzo, chicken broth, and diced tomatoes. Bring to a simmer.
  • Add meatballs back to the skillet. Cover and cook until orzo is tender and meatballs are cooked through.
  • Sprinkle feta cheese over the top and garnish with fresh parsley.

Notes

  • You can substitute ground turkey or chicken for the ground beef if you prefer a leaner option.
  • If you don’t have orzo, you can use small pasta such as farfalle or penne.
  • For a lighter dish, use low-fat feta cheese.
