  • Remove giblets from broth, chop finely, and set aside. Reserve broth.
  • In a separate saucepan, melt butter over medium heat. Stir in flour to make a roux.
  • Gradually whisk in the reserved broth until smooth. Bring to a boil, stirring constantly.
  • Reduce heat and simmer until thickened, about 5 minutes.
  • Stir in chopped giblets and season with salt and pepper.
