For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)

For the Potatoes:

  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease with cooking spray.
  • Season the Chicken:
    In a small bowl, combine the Italian seasoning, smoked paprika, salt, and black pepper. Rub the seasoning mixture evenly over the chicken breasts (or thighs). Drizzle with 1 tablespoon of olive oil and set aside.
  • Prepare the Potatoes:
    In a large bowl, toss the halved baby potatoes with 3 tablespoons of olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper. Mix well to ensure the potatoes are coated evenly.
  • Arrange on the Baking Sheet:
    Spread the seasoned potatoes evenly on the prepared baking sheet. Place the chicken breasts (or thighs) on the same sheet.
  • Bake:
    Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden brown and fork-tender.
  • Serve:

  • You can swap the Yukon Gold or red potatoes for baby potatoes of your choice, such as fingerlings or even russet potatoes.
