For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 teaspoon Italian seasoning

For the Potatoes:
- 1.5 pounds baby Yukon Gold or red potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ⅓ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease with cooking spray. - Season the Chicken:
In a small bowl, combine the Italian seasoning, smoked paprika, salt, and black pepper. Rub the seasoning mixture evenly over the chicken breasts (or thighs). Drizzle with 1 tablespoon of olive oil and set aside. - Prepare the Potatoes:
In a large bowl, toss the halved baby potatoes with 3 tablespoons of olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper. Mix well to ensure the potatoes are coated evenly. - Arrange on the Baking Sheet:
Spread the seasoned potatoes evenly on the prepared baking sheet. Place the chicken breasts (or thighs) on the same sheet. - Bake:
Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden brown and fork-tender. - Serve:
Remove from the oven and let the chicken rest for a few minutes before serving. Serve the chicken with the roasted potatoes. Optionally, garnish with fresh parsley or additional Parmesan cheese.

- You can swap the Yukon Gold or red potatoes for baby potatoes of your choice, such as fingerlings or even russet potatoes.
- For extra crispy potatoes, increase the temperature to 425°F (220°C) for the last 5-7 minutes of baking.
