For the steak bites:

  • 1 pound sirloin steak, cut into cubes

  • 2 tablespoons garlic, minced

  • 4 tablespoons butter

  • Salt and pepper to taste

For the smashed potatoes:

  • 1 pound baby potatoes

  • 1 cup cheddar cheese, shredded

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh chives, chopped (for garnish)


Instructions

  • Prepare the smashed potatoes:

    • Bring a pot of salted water to a boil. Add the baby potatoes and cook for about 15-20 minutes, or until fork-tender.

    • Drain the potatoes and return them to the pot.

    • Use a potato masher or fork to gently smash the potatoes.

    • Drizzle the olive oil over the smashed potatoes, then season with salt and pepper. Top with shredded cheddar cheese and place the potatoes under the broiler for 2-3 minutes or until the cheese is melted and bubbly. Garnish with fresh chives.

  • Cook the steak bites:

    • While the potatoes are cooking, heat a large skillet over medium-high heat.

    • Season the steak cubes with salt and pepper.

    • Add 2 tablespoons of butter to the skillet and melt.

    • Add the steak cubes to the skillet and cook for about 4-5 minutes, stirring occasionally, until browned and cooked to your desired doneness.

    • Add the minced garlic and remaining 2 tablespoons of butter. Stir to coat the steak bites in the garlic butter sauce and cook for an additional 1-2 minutes.

    • Garnish with chopped fresh parsley.

Notes

You can substitute the sirloin steak with any cut of steak you prefer, such as ribeye or flank steak.
