Instructions
- Separate the egg whites and yolks into two different bowls.

- In the bowl with the egg whites, whisk until soft peaks form. Gradually add sugar and continue to whisk until stiff peaks form.
- Gently fold the egg white mixture into the yolk mixture until just combined.
- Heat a non-stick pan over low heat. Grease with butter.
- Spoon the pancake batter onto the pan, creating small, thick pancakes.
- Cook for about 3 minutes on each side, or until golden brown.
