Instructions
- Boil the eggs by placing them in a pot of cold water and bringing to a boil. Reduce heat and simmer for about 10 minutes. Remove from heat and cool the eggs.
- Peel the eggs and chop them into small pieces.
- In a bowl, mix the chopped eggs with mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Stir until creamy and well combined.
- Toast the bread slices, if desired, for added crunch.
- Spread the egg salad mixture on one slice of bread, then top with lettuce or spinach if using.
- Place the other slice of bread on top, cut the sandwich in half, and serve.
