- 1 3/4 cups powdered sugar
- 3 large egg whites, room temperature
- 1/4 teaspoon cream of tartar
- 1/4 cup granulated sugar
- Food coloring (optional)
Instructions
- Preheat the oven to 300°F (150°C). Line baking sheets with parchment paper.
- In a food processor, pulse almond flour and powdered sugar until combined. Sift the mixture into a large bowl.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar and continue to beat until stiff peaks form.
- Gently fold the almond flour mixture into the egg white mixture until smooth. Add food coloring, if desired.
- Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets.
- Tap the baking sheets on the counter to release air bubbles. Let the macarons sit at room temperature for 30 minutes.
- Bake for 18-20 minutes, until the macarons are set and lightly crisp. Let cool completely before filling and serving.

- Letting the macarons sit at room temperature helps to form a “skin” that is essential for achieving the perfect texture.
