Description

This Easy Divinity Candy is a sweet, airy treat made with sugar, corn syrup, and egg whites, creating a light, melt-in-your-mouth candy. It’s perfect for holidays, special occasions, or just when you’re craving something sweet!


Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1/4 tsp salt
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  • In a saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring constantly, until sugar dissolves and the mixture comes to a boil.
  • Continue boiling, without stirring, until a candy thermometer reads 260°F (hard-ball stage).
  • In a mixing bowl, beat egg whites until stiff peaks form. Slowly pour hot sugar mixture into egg whites while beating constantly at high speed.
  • Add vanilla extract and continue beating until the mixture holds its shape.
  • Stir in nuts if desired.
  • Drop by spoonfuls onto waxed paper and let cool until set.

Notes

  • Make sure the candy mixture reaches the right temperature (260°F) for the perfect texture.
  • If you prefer, you can leave out the nuts for a smoother texture.
  • The candy will harden as it cools, so be sure to work quickly once it’s mixed.
