Description

This Easy Baked Honey Dijon Chicken features a sweet and tangy glaze made with honey, Dijon mustard, and a hint of garlic. It’s a simple yet flavorful dish that comes together effortlessly and bakes to perfection with tender chicken breasts or thighs. The addition of rosemary brings an aromatic touch, making it the perfect dinner for busy nights or when you’re craving something both quick and satisfying.

Ingredients

Scale
  • 1/4 cup honey

  • 2 tbsp Dijon mustard

  • 2 tbsp whole grain Dijon mustard

  • 2 tbsp apple cider vinegar

  • 1 tbsp soy sauce (or tamari for gluten-free)

  • 2 cloves garlic, minced or grated

  • Salt and pepper, to taste

  • 1/2 cup chicken broth (or water)

  • 1 lb boneless skinless chicken breasts (or thighs)

  • 23 sprigs of fresh rosemary

Instructions

  • Preheat Oven & Prepare Baking Dish
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.

  • Make the Honey Dijon Sauce
In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, apple cider vinegar, soy sauce, minced garlic, salt, and pepper until smooth.

  • Prepare the Chicken
Place the chicken breasts (or thighs) in the prepared baking dish. Pour the honey Dijon sauce over the chicken, ensuring each piece is coated evenly.

  • Add Broth & Rosemary
Pour the chicken broth (or water) into the dish. Add the rosemary sprigs on top of the chicken for extra flavor.

  • Bake the Chicken
Bake in the preheated oven for 25-30 minutes (depending on the thickness of the chicken breasts) or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.

  • Serve
Once baked, remove the chicken from the oven and let it rest for a few minutes. Serve the chicken with the sauce from the pan and garnish with fresh rosemary if desired.

Notes

Chicken Thighs: You can substitute chicken breasts with thighs for a juicier, more flavorful option.

Gluten-Free Option: Use tamari or omit the soy sauce entirely to make this recipe gluten-free.

Add Veggies: Serve with roasted veggies or a side salad to balance the meal.

Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
