Description

Easter Bird’s Nest Cookies are festive, no-bake treats made from crunchy chow mein noodles or pretzels coated in sweet melted chocolate or butterscotch. Topped with colorful candy eggs, these whimsical cookies are perfect for Easter celebrations and fun for kids to make. Sweet, salty, and adorable—each bite is a springtime delight.

Ingredients

Scale
  • 3 cups chow mein noodles or broken pretzel sticks

  • 1½ cups chocolate chips or butterscotch chips

  • ½ cup peanut butter (optional)

  • 1 tablespoon coconut oil (optional, for thinning)

  • 1 cup mini candy eggs (e.g., Cadbury Mini Eggs or jelly beans)

  • Sprinkles or edible glitter (optional)

  • Candy melts or white chocolate for decoration (optional)

Instructions

  1. In a microwave-safe bowl, melt chocolate chips and peanut butter (if using) in 20-second intervals, stirring until smooth. Add coconut oil if needed for consistency.

  2. Mix in the noodles or pretzels until fully coated.

  3. Scoop small mounds onto a parchment-lined baking sheet. Shape into nests with a spoon or fingers.

  4. Press 2–3 mini candy eggs into the center of each nest.

  5. Let the cookies set at room temperature or chill for 15–20 minutes.

  6. Decorate with sprinkles or drizzle with candy melts if desired.

Notes

Spray your hands with cooking spray to prevent sticking when shaping nests.

Use pretzel sticks for a saltier crunch or chow mein for a classic look.

White chocolate and pastel melts add a fun color twist.

Peanut butter adds richness and helps the nests hold better.
