  • 1 tbsp olive oil

  • 1 large onion, chopped

  • 2 medium carrots, diced

  • 2 celery stalks, chopped

  • 3 cloves garlic, minced

  • 1 cup green or brown lentils, rinsed

  • 1 (14.5 oz) can crushed tomatoes

  • 4 cups vegetable broth

  • 2 cups water

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp ground turmeric

  • 1 tsp smoked paprika

  • ½ tsp ground cinnamon

  • ¼ tsp cayenne pepper (optional)

  • Salt and black pepper, to taste

  • 2 cups spinach or kale, chopped

  • 1 tbsp lemon juice

  • Fresh parsley or cilantro, chopped (for garnish)


Instructions

  • In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery. Sauté until softened, about 5–7 minutes.

  • Stir in minced garlic and all ground spices (cumin, coriander, turmeric, paprika, cinnamon, cayenne). Cook for another 1–2 minutes until fragrant.

  • Add lentils and crushed tomatoes. Stir to combine.

  • Pour in vegetable broth and water. Bring to a boil, then reduce heat to a simmer. Cover and cook for 25–30 minutes, or until lentils are tender.

  • Stir in chopped spinach or kale and cook for another 5 minutes until wilted.

 

  • Finish with a squeeze of fresh lemon juice and chopped herbs. Taste and adjust seasoning with salt and pepper.

Notes

Rinse lentils thoroughly before cooking to remove debris and reduce bitterness.

Use fresh spices for the most vibrant flavor.

Chop vegetables evenly to ensure uniform cooking.
