Delightful Easter Poke Cake is a vibrant, easy-to-make dessert that features a light and fluffy cake soaked with colorful gelatin and topped with a creamy whipped topping. It’s perfect for any Easter gathering and will surely delight guests of all ages with its cheerful, pastel colors and sweet flavors.

Ingredients

Scale

For the Cake:

  • 1 box white cake mix (and ingredients listed on the box – usually eggs, water, and oil)
  • 1 package (3 oz) Jell-O gelatin (you can choose a combination of colors like strawberry, lime, orange, or blueberry for a fun effect)
  • 1 cup boiling water
  • 1/2 cup cold water

For the Topping:

  • 1 tub (8 oz) whipped topping (like Cool Whip)
  • 1 cup mini marshmallows (optional, for decoration)
  • Sprinkles or Easter-themed candies (optional)

Instructions

  • Bake the Cake:

    • Prepare and bake the white cake according to the instructions on the cake mix box. Typically, you will need to mix the cake mix with eggs, water, and oil, then bake it in a 9×13-inch baking dish at 350°F (175°C) for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
    • Once baked, remove the cake from the oven and let it cool in the pan for about 10-15 minutes.
  • Poke the Cake:

    • After the cake has cooled slightly, use the end of a wooden spoon or a straw to poke holes all over the cake, about 1-inch apart. Be sure to poke down deep but not all the way to the bottom.
  • Prepare the Gelatin:

    • In a separate bowl, dissolve the gelatin in 1 cup of boiling water. Stir until the gelatin is completely dissolved.
    • Add the 1/2 cup cold water to the gelatin mixture and stir well.
  • Pour the Gelatin:

    • Slowly pour the prepared gelatin over the poked cake, making sure the gelatin seeps into the holes. You can use different colors of gelatin to create a rainbow effect or drizzle different colors over different sections for a fun look.
    • Let the cake cool for about 15 minutes at room temperature.
  • Chill the Cake:

    • Place the cake in the refrigerator for at least 2-3 hours, or until the gelatin is set and the cake has completely cooled.

  • Add the Topping:

    • Once the cake is chilled and the gelatin has set, spread the whipped topping evenly over the cake.
    • If desired, top the cake with mini marshmallows, Easter sprinkles, or other festive candies to decorate.

Notes

  • This cake can be made a day ahead to save time on Easter.
  • Use different colors of gelatin to match your desired Easter pastel theme.

  • Feel free to garnish the cake with Easter-themed decorations like candy eggs, jelly beans, or sprinkles.
