For the Stir-Fry:

  • 8 oz (225g) rice noodles (or lo mein/udon noodles)

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced

  • 2 tablespoons cornstarch

  • 3 tablespoons vegetable oil, divided

  • 1 red bell pepper, thinly sliced

  • 2 cups (120g) broccoli florets

  • 3 green onions, sliced (plus extra for garnish)

  • 2 garlic cloves, minced

  • 1 tablespoon fresh ginger, grated

For the Sticky Sauce:

  • 1/4 cup (60ml) soy sauce

  • 2 tablespoons hoisin sauce

  • 2 tablespoons honey or brown sugar

  • 2 tablespoons rice vinegar (or lime juice)

  • 1 tablespoon sesame oil

  • 1/4 teaspoon red pepper flakes (optional, for heat)


Instructions

  1. Prepare the Noodles: Cook the rice noodles (or lo mein/udon noodles) according to package instructions. Drain and set aside.

  2. Prepare the Beef: In a small bowl, toss the thinly sliced beef with cornstarch until well-coated.

  3. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and stir-fry for 3-4 minutes, or until browned and cooked through. Remove the beef from the pan and set it aside.

  4. Cook the Vegetables: In the same skillet, add the remaining vegetable oil. Add the sliced red bell pepper, broccoli florets, and green onions. Stir-fry for about 3-4 minutes, or until the vegetables are tender-crisp.

  5. Add Aromatics: Add the minced garlic and grated ginger to the vegetables. Stir-fry for another 30 seconds, or until fragrant.

  6. Prepare the Sauce: While the vegetables are cooking, whisk together the soy sauce, hoisin sauce, honey (or brown sugar), rice vinegar (or lime juice), sesame oil, and red pepper flakes (if using) in a small bowl until combined.

  7. Combine: Add the cooked beef back into the skillet, then pour the sticky sauce over the mixture. Stir to coat everything evenly.

  8. Toss the Noodles: Add the cooked noodles to the skillet and toss everything together, making sure the noodles are coated in the sticky sauce and mixed with the beef and vegetables.

  9. Serve: Serve the sticky beef noodles hot, garnished with extra green onions if desired.

Notes

  • If you want extra heat, you can increase the amount of red pepper flakes or add a splash of sriracha.
