  • 1 cup brewed espresso, cooled
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pound ricotta cheese
  • 1/2 cup heavy cream
  • 24 ladyfinger cookies

Instructions

  • Melt the chocolate chips in a heatproof bowl over simmering water. Let it cool slightly.
  • In a separate bowl, mix the espresso, sugar, cocoa powder, and vanilla extract until the sugar is dissolved.
  • In another bowl, beat the ricotta cheese until smooth. Add the melted chocolate and mix well.
  • In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the ricotta mixture.
  • Dip the ladyfinger cookies in the espresso mixture and layer them in a dish. Spread half of the ricotta mixture over the cookies.
  • Repeat the layers with the remaining cookies and ricotta mixture.
  • Cover and refrigerate for at least 4 hours before serving.

Notes

  • For a more intense chocolate flavor, you can use dark chocolate instead of semisweet chocolate chips.
