- 1 cup semisweet chocolate chips
- 1 cup brewed espresso, cooled
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 pound ricotta cheese
- 1/2 cup heavy cream
- 24 ladyfinger cookies
Instructions
- Melt the chocolate chips in a heatproof bowl over simmering water. Let it cool slightly.
- In a separate bowl, mix the espresso, sugar, cocoa powder, and vanilla extract until the sugar is dissolved.
- In another bowl, beat the ricotta cheese until smooth. Add the melted chocolate and mix well.
- In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the ricotta mixture.
- Dip the ladyfinger cookies in the espresso mixture and layer them in a dish. Spread half of the ricotta mixture over the cookies.
- Repeat the layers with the remaining cookies and ricotta mixture.
- Cover and refrigerate for at least 4 hours before serving.
Notes
- For a more intense chocolate flavor, you can use dark chocolate instead of semisweet chocolate chips.
- This dessert can be made a day ahead of time to allow the flavors to meld together.
