- 1 cup chopped dates
- 1 cup boiling water
- 1 teaspoon baking soda
- 1 cup sugar
- 2 tablespoons butter
- 1 egg
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a small bowl, combine chopped dates and boiling water. Stir in the baking soda and let the mixture stand for a few minutes.
- In a large bowl, mix together the sugar, butter, and egg until smooth. Stir in the date mixture.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients and stir until well combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Notes
- You can replace walnuts with pecans or other nuts if desired.
- This cake is best enjoyed after a day or two when the flavors have melded together.
