  • 1.5 lbs boneless, skinless chicken breasts or thighs

  • 1 cup carrots, diced

  • 1 cup celery, diced

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • 16 oz potato gnocchi (refrigerated, frozen, or shelf-stable)

  • 2 cups fresh spinach (or 1/2 cup frozen spinach, thawed and drained)

  • 1 cup heavy cream (or half-and-half)

  • 1 tbsp olive oil or butter (optional, for sautéing)


Instructions

  1. Prep Vegetables: Dice the carrots, celery, onion, and mince the garlic. Optional: sauté in olive oil or butter for extra flavor.

  2. Add to Crockpot: Place chicken, veggies, garlic, broth, Italian seasoning, salt, and pepper into the crockpot.

  3. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is fully cooked and tender.

  4. Shred Chicken: Remove chicken, shred with two forks, then return to the crockpot.

  5. Add Gnocchi & Spinach: Stir in gnocchi and spinach. Cook on HIGH for 30 minutes, or until gnocchi is soft and spinach is wilted.

  6. Finish with Cream: Stir in the heavy cream and let soup warm through for 10–15 minutes before serving.

Notes

Use rotisserie chicken to save time—add in the last hour of cooking.

Frozen gnocchi can go straight into the crockpot—no need to thaw.

Substitute half-and-half or evaporated milk for a lighter version.

Add mushrooms, corn, or peas for extra veggies and variety.

Freeze the soup before adding the cream for best texture when reheating.
