Description

These Crispy Garlic Butter Potatoes are golden on the outside, tender on the inside, and packed with savory garlic butter flavor. Perfectly crispy and incredibly easy to make, they’re a great side dish for any meal. Whether roasted in the oven or crisped up in a skillet, these potatoes will surely be a crowd-pleaser.

Ingredients

Scale
  • 2 lbs (900g) baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tsp paprika (optional for color)
  • 1 tsp dried thyme or rosemary (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven:
Preheat your oven to 425°F (220°C).

  2. Prepare the Potatoes:
Wash and halve the baby potatoes. If they are large, you can quarter them for quicker cooking.

  3. Season the Potatoes:
In a large bowl, combine the melted butter, olive oil, minced garlic, salt, black pepper, paprika (if using), and dried thyme or rosemary. Stir to combine.

  4. Toss the Potatoes:
Add the halved potatoes to the bowl and toss them well to coat evenly in the garlic butter mixture.

  5. Roast the Potatoes:
Arrange the potatoes in a single layer on a baking sheet, cut side down for extra crispiness. Roast for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges. You can flip the potatoes halfway through for even crispiness.

  6. Finish and Garnish:
Remove the potatoes from the oven and garnish with freshly chopped parsley. Serve immediately.

Notes

  • For an extra crispy texture, make sure to place the potatoes cut side down on the baking sheet.
  • You can substitute the dried thyme or rosemary with any herb of your choice like oregano or basil.
  • If you prefer to cook them in a skillet, you can heat the butter and oil over medium heat, add the garlic, then toss in the potatoes and cook until crispy, about 20-25 minutes, flipping occasionally.
