Ingredients
- 2 lbs (900g) baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 tsp paprika (optional for color)
- 1 tsp dried thyme or rosemary (optional)
- Fresh parsley, chopped (for garnish)

Preheat the Oven:
Preheat your oven to 425°F (220°C). -
Prepare the Potatoes:
Wash and halve the baby potatoes. If they are large, you can quarter them for quicker cooking. -
Season the Potatoes:
In a large bowl, combine the melted butter, olive oil, minced garlic, salt, black pepper, paprika (if using), and dried thyme or rosemary. Stir to combine. -
Toss the Potatoes:
Add the halved potatoes to the bowl and toss them well to coat evenly in the garlic butter mixture. -
Roast the Potatoes:
Arrange the potatoes in a single layer on a baking sheet, cut side down for extra crispiness. Roast for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges. You can flip the potatoes halfway through for even crispiness. -
Finish and Garnish:
Remove the potatoes from the oven and garnish with freshly chopped parsley. Serve immediately.

- For an extra crispy texture, make sure to place the potatoes cut side down on the baking sheet.
- You can substitute the dried thyme or rosemary with any herb of your choice like oregano or basil.
- If you prefer to cook them in a skillet, you can heat the butter and oil over medium heat, add the garlic, then toss in the potatoes and cook until crispy, about 20-25 minutes, flipping occasionally.
