Description

Creamy Zucchini Sauce is a deliciously light yet rich-tasting sauce that brings out the best of summer’s most versatile vegetable. With its velvety texture and gentle, savory flavor, this sauce can elevate a wide range of dishes—from pasta and rice to grilled proteins and roasted vegetables. It’s a wonderful way to sneak in more veggies without sacrificing flavor or creaminess, and it’s naturally adaptable to different dietary preferences.


Ingredients

  • 2 medium zucchinis, chopped

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 1 tablespoon fresh lemon juice

  • 1/4 cup fresh herbs (basil, parsley, or dill), chopped

  • 1/2 cup heavy cream (or coconut cream for a vegan option)

  • 1/4 cup grated Parmesan cheese (optional; use nutritional yeast for a vegan version)


Instructions

  • In a large skillet, heat olive oil over medium heat. Add chopped zucchini, onion, and garlic. Sauté until vegetables are soft and lightly golden, about 8–10 minutes.

  • Season with salt and pepper. Add a splash of water or vegetable broth, and simmer for 5–10 minutes until the zucchini is very tender.

  • Transfer the mixture to a blender or use an immersion blender directly in the pan to puree until smooth.

  • Return the mixture to the pan. Stir in heavy cream, lemon juice, and chopped herbs. Simmer for a few more minutes until slightly thickened.

 

  • Taste and adjust seasoning. Stir in grated Parmesan cheese if desired.

Notes

Use smaller zucchinis for the best flavor and fewer seeds.

Don’t skip the simmer—it deepens the flavor and softens the zucchini.

Blend thoroughly for a silky-smooth sauce.

Add lemon juice last to preserve its brightness.

If the sauce is too thick, thin it with a splash of broth or cream.
