Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 4 oz Taleggio cheese, rind removed and cubed
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  • Add mushrooms and cook until browned.
  • Pour in broth and heavy cream. Bring to a simmer.
  • Add Taleggio cheese and stir until melted and sauce is creamy.
