Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can artichoke hearts, drained and chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add onion and garlic, sauté until onions are translucent.
  • Stir in artichoke hearts and cook for 2 minutes.
  • Pour in vegetable broth and bring to a simmer.
  • Add in heavy cream and spinach, cook until spinach wilts.
  • Season with salt and pepper.
