- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1 tablespoon minced shallot
- 1 tablespoon Cajun seasoning
- 1/4 cup white wine
- 1 tablespoon fresh lemon juice
- 1/3 cup heavy cream
- 1/3 cup half and half
- 1/4 cup freshly grated parmesan
- Black pepper, to taste
- Chopped chives or green onions, for garnish
Instructions
- Cook the Linguine:
Cook the linguine according to the package instructions. Drain and set aside, reserving 1/2 cup of pasta cooking water. - Prepare the Sauce:
In a large skillet, melt the butter over medium heat. Add the minced garlic and shallot, and sauté for 2-3 minutes until fragrant and softened. - Add the Cajun Seasoning:
Stir in the Cajun seasoning and cook for another 1-2 minutes, allowing the flavors to meld. - Deglaze with Wine and Lemon:
Add the white wine and fresh lemon juice to the skillet. Let it simmer for 2-3 minutes, scraping the bottom of the skillet to release any flavorful bits. - Make the Cream Sauce:
Lower the heat and add the heavy cream and half and half. Stir well and let the sauce simmer for 5-7 minutes, until it thickens slightly. - Toss the Pasta:
Add the cooked linguine to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency. - Finish the Dish:
Stir in the freshly grated parmesan, and season with black pepper to taste. Continue tossing until the cheese has melted and everything is evenly coated. - Garnish and Serve:
Serve the linguine hot, garnished with chopped chives or green onions for a pop of color and freshness.
