  • Yield: 2 servings 1x
  • Diet: Vegetarian

Description

This creamy Cajun linguine is a perfect blend of bold, spicy Cajun seasoning and a rich, creamy sauce. The linguine is coated in a luscious mixture of butter, garlic, shallots, white wine, lemon juice, and heavy cream, topped with parmesan and a garnish of fresh chives. It’s a quick and flavorful dish that brings comfort with every bite.

Ingredients

Scale
  • 4 oz. linguine
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1 tablespoon minced shallot
  • 1 tablespoon Cajun seasoning
  • 1/4 cup white wine
  • 1 tablespoon fresh lemon juice
  • 1/3 cup heavy cream
  • 1/3 cup half and half
  • 1/4 cup freshly grated parmesan
  • Black pepper, to taste
  • Chopped chives or green onions, for garnish

Instructions

  • Cook the Linguine:
Cook the linguine according to the package instructions. Drain and set aside, reserving 1/2 cup of pasta cooking water.
  • Prepare the Sauce:
In a large skillet, melt the butter over medium heat. Add the minced garlic and shallot, and sauté for 2-3 minutes until fragrant and softened.
  • Add the Cajun Seasoning:
Stir in the Cajun seasoning and cook for another 1-2 minutes, allowing the flavors to meld.
  • Deglaze with Wine and Lemon:
Add the white wine and fresh lemon juice to the skillet. Let it simmer for 2-3 minutes, scraping the bottom of the skillet to release any flavorful bits.
  • Make the Cream Sauce:
Lower the heat and add the heavy cream and half and half. Stir well and let the sauce simmer for 5-7 minutes, until it thickens slightly.
  • Toss the Pasta:
Add the cooked linguine to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
  • Finish the Dish:
Stir in the freshly grated parmesan, and season with black pepper to taste. Continue tossing until the cheese has melted and everything is evenly coated.
  • Garnish and Serve:
Serve the linguine hot, garnished with chopped chives or green onions for a pop of color and freshness.

Notes

  • Adjust the amount of Cajun seasoning depending on your spice tolerance.
  • For extra richness, substitute all of the half and half with heavy cream.
  • You can add grilled chicken, shrimp, or vegetables for added protein and texture.
