This savory and comforting Cracker Barrel-style meatloaf is packed with flavors from ground beef, vegetables, and a tangy sweet sauce. Perfectly baked to a golden perfection, it’s a hearty meal that will satisfy the whole family.
Ingredients

- 1 1/2 lbs ground beef
- 1 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 egg, beaten
- 8 oz canned diced tomatoes
- 1/2 cup quick-cooking oats
Sauce:
- 1/2 cup ketchup
- 1 tbsp brown sugar
- 1 tbsp mustard
Instructions
- Mix all meatloaf ingredients well and form into a loaf shape in a 9″x13″ baking dish.
- Mix sauce ingredients and pour over the loaf.
- Bake at 350°F for 1 hour.
Notes
- If you prefer a firmer texture, you can replace the oats with breadcrumbs.
- For added flavor, top the meatloaf with additional ketchup during the last 10 minutes of baking.
- Let the meatloaf rest for 10 minutes after baking before slicing.
