- 2 heads of garlic
- Olive oil
- 1 onion, finely chopped
- Chicken or vegetable broth

Instructions
- Preheat the oven to 400°F (200°C).
- Cut off the top of the garlic heads to expose the cloves.
- Drizzle with olive oil and wrap in aluminum foil.
- Roast the garlic in the oven for about 30-40 minutes until soft.
- In a large pot, heat the remaining olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Squeeze the roasted garlic cloves into the pot and mix well.
- Pour in the broth, add the bay leaf and thyme, and season with salt and pepper.
- Simmer for about 20 minutes.
- Toast the baguette slices and sprinkle with grated Gruyere cheese.
- Ladle the soup into bowls, top with the cheese-covered baguette, and broil until the cheese is melted and bubbly.
- Garnish with fresh parsley and serve hot.

- For extra flavor, you can use homemade broth instead of store-bought.
