  • 2 heads of garlic
  • Olive oil
  • 1 onion, finely chopped
  • Chicken or vegetable broth
  • Bay leaf
  • Dried thyme
  • Salt and pepper to taste
  • French baguette (4 slices)
  • Gruyere cheese (grated)
  • Fresh parsley (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut off the top of the garlic heads to expose the cloves.
  • Drizzle with olive oil and wrap in aluminum foil.
  • Roast the garlic in the oven for about 30-40 minutes until soft.
  • In a large pot, heat the remaining olive oil over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Squeeze the roasted garlic cloves into the pot and mix well.
  • Pour in the broth, add the bay leaf and thyme, and season with salt and pepper.
  • Simmer for about 20 minutes.
  • Toast the baguette slices and sprinkle with grated Gruyere cheese.
  • Ladle the soup into bowls, top with the cheese-covered baguette, and broil until the cheese is melted and bubbly.
  • Garnish with fresh parsley and serve hot.

Notes

  • For extra flavor, you can use homemade broth instead of store-bought.
  • The longer the garlic roasts, the more mellow and sweet the flavor will become.
  • You can substitute Gruyere with Swiss cheese if needed.
