  • 4¾ cups all-purpose flour

  • 1 tablespoon kosher salt

  • 2 tablespoons light brown sugar

  • 2¼ teaspoons instant yeast

  • ½ cup lukewarm water

  • 2 tablespoons unsalted butter, room temperature

  • 1 cup lukewarm whole milk

  • 1 egg yolk (for egg wash)

  • 2 tablespoons baking soda

  • 1 cup granulated sugar

  • 3 tablespoons ground cinnamon

  • 6 tablespoons unsalted butter, melted


Instructions

  • Prepare the Dough: In a medium bowl, combine the lukewarm milk, 1 tablespoon of sugar, and yeast. Let sit for 10–15 minutes until foamy.

  • Mix Ingredients: In a stand mixer bowl, combine the remaining sugar, flour, salt, and butter. Add the yeast mixture and warm water. Mix on low speed until combined, then knead on medium speed for about 5 minutes until a smooth dough forms.

  • First Rise: Place the dough in a lightly oiled bowl, cover, and let rise for 1 hour until doubled in size.

  • Shape Pretzels: Divide the dough into 12 equal portions. Roll each into a 20-inch rope and shape into a U, twist the ends twice, and fold them down to form a pretzel shape. Place on a parchment-lined baking sheet and let rise for 20–30 minutes.

  • Boil Pretzels: Preheat oven to 375°F (190°C). Bring a large pot of water to a boil and add baking soda. Carefully drop each pretzel into the boiling water for 40 seconds on each side. Remove with a slotted spoon and place back on the baking sheet.

  • Bake: Brush each pretzel with the egg wash. Bake for 12–14 minutes until golden brown.

  • Cinnamon Sugar Coating: While the pretzels bake, mix the granulated sugar and cinnamon in a shallow bowl.

 

  • Coat Pretzels: Once baked, brush each pretzel with melted butter and dip into the cinnamon sugar mixture. Serve warm.

Notes

For a vegan version, substitute plant-based butter and ensure the sugar is bone-char free.

To make mini pretzel bites, cut the dough into smaller pieces before shaping.

For a gluten-free option, use a gluten-free all-purpose flour blend.
