Instructions

Marinate the Chicken:
In a bowl or resealable bag, combine lime juice and zest, minced garlic, cumin, paprika, salt, pepper, and olive oil. Add the chicken, ensuring it’s well-coated. Marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours. -
Prepare the Corn:
Preheat a grill or grill pan over medium-high heat. Brush the corn halves with olive oil and season with salt and pepper. Grill the corn, turning occasionally, until lightly charred and tender, about 10 minutes. Remove from heat and let cool slightly before cutting the kernels off the cob. -
Cook the Chicken:
Heat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 5–7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Let the chicken rest for a few minutes before slicing.

In a large bowl, combine the grilled corn kernels, chopped chicken, chopped cilantro, lime juice, olive oil, salt, and pepper. Toss gently to combine.
Notes
