Description

  • 2 cups crushed Christmas cookies
  • 1/2 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup Christmas cookie crumbs (for folding into the filling)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, mix together crushed Christmas cookies and melted butter. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  • In a large bowl, beat the cream cheese and sugar until smooth. Mix in eggs and vanilla extract until well combined. Gently fold in the 1 cup of crushed Christmas cookie crumbs.
  • Pour the cheesecake mixture over the cookie crust in the springform pan.
  • Bake in the preheated oven for 40 minutes, or until the center is almost set.
