  • 1 cup milk
  • 4 egg yolks

  • 4 egg whites

Instructions

  • Preheat oven to 350°F (175°C). Grease a soufflé dish or ramekins.
  • In a saucepan, combine sugar, flour, cocoa powder, and salt. Gradually stir in milk.
  • Cook over medium heat, stirring continuously, until the mixture thickens and becomes bubbly.
  • Reduce heat and continue cooking and stirring for 2 more minutes.
  • Remove from heat.
  • In a small mixing bowl, beat egg yolks.
  • Gradually stir in about 1 cup of the hot mixture into the egg yolks to temper them.
  • Return the egg yolk mixture to the saucepan and bring it to a gentle boil.
  • Cook and stir for another 2 minutes.
  • Remove from heat and stir in vanilla extract.
  • In a separate large mixing bowl, beat egg whites until stiff peaks form.
  • Gently fold the beaten egg whites into the chocolate mixture, being careful not to deflate them.
  • Pour the mixture into the prepared soufflé dish or ramekins.
  • Bake for 25-30 minutes, or until the soufflé is puffed up and a toothpick inserted into the center comes out clean.
  • Serve immediately and enjoy!

  • The soufflé will deflate as it cools, so serve it right away to enjoy its perfect puffed-up texture.
