Ingredients

  • Powdered Sugar: Sweetens and helps to bind the peanut butter mixture

  • Vanilla Extract: Adds flavor depth
  • Chocolate Chips: Semisweet or milk chocolate, melted for coating
  • Crispy Rice Cereal (Optional): For added crunch, if desired
  • Salt: A pinch to balance the sweetness

Instructions

  • In a large mixing bowl, combine the peanut butter, powdered sugar, softened butter, and vanilla extract. Stir well until the mixture is smooth and fully combined.
  • Shape the mixture into small balls (about 1 inch in diameter) using your hands or a cookie scoop. Place them on a parchment-lined baking sheet.
  • Chill the peanut butter balls in the freezer for at least 30 minutes, or until firm.
  • While the peanut butter balls chill, melt the chocolate chips in a heatproof bowl over simmering water or in the microwave, stirring every 30 seconds until smooth.
  • Once the peanut butter balls are chilled and firm, dip each ball into the melted chocolate, coating them completely. Return the coated balls to the baking sheet.
  • Allow the chocolate to harden at room temperature or place the balls in the fridge to speed up the process.
  • Once the chocolate has set, store the peanut butter balls in an airtight container in the fridge.

Notes

  • You can drizzle some extra melted chocolate on top for decoration.
  • If you prefer a thicker chocolate coating, dip each peanut butter ball twice for an extra layer.
