For the Cake Layers:

  • 2 packs (14-16) graham crackers (enough to cover the bottom of your pan)
  • 2 cups heavy cream (for whipping)
  • 1/4 cup powdered sugar

For the Pudding Layer:

  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • 1 cup sour cream (or Greek yogurt for a tangier taste)

For the Chocolate Glaze:

  • 1/2 cup semisweet chocolate chips
  • 2 tbsp unsalted butter
  • 2 tbsp milk
  • 2 tbsp powdered sugar

Instructions

  • Prepare the pudding layer:
    In a medium bowl, whisk together the instant vanilla pudding mix and cold milk. Let it sit for 2 minutes until it thickens. Stir in the sour cream (or Greek yogurt) until smooth. Set aside.
  • Whip the cream:
    In a separate large bowl, beat the heavy cream and powdered sugar until stiff peaks form. Add the vanilla extract and continue to whip until fully combined.
  • Assemble the dessert layers:
    Line the bottom of a 9×13-inch baking dish with a layer of graham crackers. Break pieces if needed to cover the entire bottom. Spread half of the pudding mixture over the graham crackers, smoothing it out evenly. Then, spread half of the whipped cream over the pudding layer.
  • Add another layer of graham crackers:
    Add another layer of graham crackers on top of the whipped cream. Repeat the process by spreading the remaining pudding mixture and whipped cream on top of the second layer of graham crackers.
  • Make the chocolate glaze:
    In a small saucepan over low heat, melt the chocolate chips, butter, and milk together, stirring until smooth. Remove from heat and stir in the powdered sugar until combined.
  • Top the dessert:
    Pour the chocolate glaze evenly over the top layer of whipped cream. Use a spatula to spread it out gently.
  • Chill the dessert:
    Refrigerate the dessert for at least 4 hours, or overnight if possible, to allow the layers to set and the flavors to meld together.
