- 1 lb ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 2 cups elbow macaroni
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Shredded cheddar cheese, for topping
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Add the chopped onion, red bell pepper, and minced garlic, and cook until the vegetables are softened.
- Stir in the beef broth, diced tomatoes, kidney beans, macaroni, chili powder, cumin, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the macaroni is cooked through.
- Serve hot, topped with shredded cheddar cheese.
