Description

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 medium cauliflower, cut into florets

  • 2 tablespoons olive oil

  • 1 tablespoon chili powder

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • Juice of 1 lime

  • Salt and black pepper, to taste

  • 4 large tortillas or wraps

  • Fresh toppings: lettuce, red onion, avocado, cilantro

  • Sauce or dressing of choice (optional)


Instructions

  • Preheat Oven: Set your oven to 400°F (200°C).

  • Prepare Chickpeas and Cauliflower: In a large bowl, toss chickpeas and cauliflower florets with olive oil, chili powder, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.

  • Roast: Spread the mixture in a single layer on a baking sheet. Roast for 25–30 minutes, flipping halfway through, until crispy and golden.

  • Add Lime: Remove from oven and drizzle with fresh lime juice. Toss gently to coat.

  • Assemble Wraps: Warm tortillas slightly. Place a portion of the roasted mixture on each tortilla and add desired toppings.

 

  • Serve: Fold the wraps and serve warm with your favorite dip or dressing.

Notes

For a spicier kick, add cayenne pepper or hot sauce to the seasoning mix.

To make it low-carb, serve the filling in lettuce wraps instead of tortillas.

Enhance creaminess with a drizzle of tahini sauce, vegan ranch, or avocado crema.

Add grilled tofu or tempeh for an extra protein boost.

Incorporate other roasted vegetables like bell peppers or zucchini for added flavor and color.
