Ingredients

2 boneless, skinless chicken breasts, thinly sliced

2 medium zucchinis, sliced into half-moons

1 red bell pepper, sliced

1/2 onion, thinly sliced

3 cloves garlic, minced

2 tbsp olive oil (or sesame oil)

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp hoisin sauce (optional)

1 tbsp rice vinegar

1 tsp sesame oil (optional)

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

1 tbsp fresh cilantro, chopped (for garnish)

1 tbsp sesame seeds (for garnish)
Instructions

Prepare the sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes. Set aside.

Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken, season with salt and pepper, and cook for 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set it aside.

Cook the vegetables: In the same skillet, add the remaining olive oil. Add the onions, bell peppers, and zucchini. Stir-fry for 3-5 minutes, or until the vegetables are tender but still crisp.

Combine and stir: Add the garlic to the skillet and stir for about 30 seconds until fragrant. Return the cooked chicken to the skillet and pour the prepared sauce over the chicken and vegetables. Toss everything together until well coated and heated through.

Garnish and serve: Garnish with chopped cilantro and sesame seeds before serving. Serve the stir fry over rice or noodles if desired.
Notes
For a low-carb version, serve with cauliflower rice instead of regular rice.
You can substitute the chicken with shrimp, beef, or tofu if desired.
If you prefer a thicker sauce, you can mix a teaspoon of cornstarch with a tablespoon of water and stir it into the sauce during the final step.
