Description

These tender Chicken Ricotta Meatballs, paired with a creamy spinach Alfredo sauce, make for a flavorful and satisfying dish. Perfect for a hearty meal, these meatballs are delicious served over pasta, rice, or your favorite grain.

Ingredients

Scale
  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 cup Alfredo sauce
  • 2 cups fresh spinach

Instructions

  • In a mixing bowl, combine ground chicken, ricotta cheese, breadcrumbs, egg, garlic, Parmesan cheese, salt, and pepper. Mix until well combined.
  • Shape the mixture into meatballs.
  • Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 10-12 minutes.
  • In the same skillet, add the Alfredo sauce and spinach. Cook until the spinach is wilted and the sauce is heated through.
  • Serve the meatballs with the spinach Alfredo sauce over pasta or rice.

Notes

  • For a lighter version, use a low-fat Alfredo sauce or make a homemade lighter sauce.
  • You can add extra herbs like basil or thyme for additional flavor.
  • These meatballs also work great as a meal prep option when stored in the fridge for up to 3 days.
