  • 12 ounces frozen mixed vegetables, thawed slightly

  • 1/8 teaspoon dried thyme

For the Topping:

  • 1214 Ritz crackers (about half a sleeve), crushed

  • 1/2 cup shredded cheddar cheese


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or casserole dish.

  2. Prepare the Casserole Mixture: In a large bowl, combine the thawed hash browns, diced cooked chicken, bacon bits, shredded cheddar cheese, cream of chicken soup, milk, thawed mixed vegetables, and dried thyme. Stir everything together until well combined.

  3. Transfer to Baking Dish: Pour the casserole mixture into the prepared baking dish, spreading it evenly with a spatula.

  4. Prepare the Topping: In a small bowl, combine the crushed Ritz crackers and shredded cheddar cheese for the topping. Sprinkle this mixture evenly over the casserole.

  5. Bake: Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.
