1 tablespoon extra-virgin olive oil
-
2 pounds boneless, skinless chicken breast, cut against the grain into ½-inch-thick slices

1 green bell pepper, thinly sliced
-
1 yellow bell pepper, thinly sliced
-
1 small red onion, halved and thinly sliced
Optional toppings:
-
Rice

Black beans or pinto beans

Fresh cilantro
Instructions
-
Prepare the chicken fajitas:
-
In a large bowl, combine the taco seasoning, lime juice, and olive oil.
-
Add the chicken slices to the bowl and toss to coat evenly with the seasoning mixture. Let it marinate for at least 15-20 minutes (or longer for more flavor).
-
-
Cook the chicken and vegetables:
-
Heat a large skillet or pan over medium-high heat and add the marinated chicken. Cook for 5-6 minutes, stirring occasionally, until the chicken is cooked through and browned on the edges.
-
Remove the chicken from the pan and set aside.
-
In the same pan, add the bell peppers and red onion. Cook for about 4-5 minutes until they are tender but still crisp.
-
-
Assemble the burrito bowl:
-
In a bowl, layer the cooked chicken, sautéed bell peppers, and onions.
-
Add any optional toppings like rice, beans, guacamole, and cheese.
-
Garnish with fresh cilantro if desired and serve immediately.
-
Notes
This recipe can be made ahead for meal prep. Store the chicken and vegetables in an airtight container for up to 4 days in the refrigerator.
For a lighter version, serve the chicken and vegetables on a bed of lettuce instead of rice.
Add a little heat by topping with jalapeños or a spicy salsa.
