For the chicken fajitas:

  • ¼ cup Taco Seasoning (homemade or store-bought)

  • 2 tablespoons fresh lime juice (from 1 to 2 limes)

  • 1 tablespoon extra-virgin olive oil

  • 2 pounds boneless, skinless chicken breast, cut against the grain into ½-inch-thick slices

  • 1 red bell pepper, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 small red onion, halved and thinly sliced

Optional toppings:

  • Rice

  • Black beans or pinto beans

  • Guacamole

  • Sour cream

  • Shredded cheese

  • Fresh cilantro


Instructions

  • Prepare the chicken fajitas:

    • In a large bowl, combine the taco seasoning, lime juice, and olive oil.

    • Add the chicken slices to the bowl and toss to coat evenly with the seasoning mixture. Let it marinate for at least 15-20 minutes (or longer for more flavor).

  • Cook the chicken and vegetables:

    • Heat a large skillet or pan over medium-high heat and add the marinated chicken. Cook for 5-6 minutes, stirring occasionally, until the chicken is cooked through and browned on the edges.

    • Remove the chicken from the pan and set aside.

    • In the same pan, add the bell peppers and red onion. Cook for about 4-5 minutes until they are tender but still crisp.

 

  • Assemble the burrito bowl:

    • In a bowl, layer the cooked chicken, sautéed bell peppers, and onions.

    • Add any optional toppings like rice, beans, guacamole, and cheese.

    • Garnish with fresh cilantro if desired and serve immediately.

Notes

This recipe can be made ahead for meal prep. Store the chicken and vegetables in an airtight container for up to 4 days in the refrigerator.

For a lighter version, serve the chicken and vegetables on a bed of lettuce instead of rice.

Add a little heat by topping with jalapeños or a spicy salsa.
