Description
This hearty Chicken and Sausage Pasta combines tender chicken breasts, flavorful kielbasa sausage, and fresh spinach with a creamy parmesan sauce. It’s a quick and delicious one-pan meal that’s perfect for busy weeknights or a weekend dinner with family and friends.
Ingredients
Scale
- 2 chicken breasts, sliced
- 1 pound kielbasa sausage, sliced
- 3 cups baby spinach
- 3 tablespoons olive oil
- 3 teaspoons minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces penne pasta
- 1/2 cup heavy cream
- 3 tablespoons parmesan cheese
Instructions
- Cook the Pasta:
Cook the penne pasta according to the package instructions. Drain, reserving 1/2 cup of pasta water, and set aside. - Cook the Chicken and Sausage:
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced chicken breasts and cook for 5-7 minutes, until browned and cooked through. Remove the chicken from the skillet and set aside. In the same skillet, add the remaining olive oil and the sliced kielbasa sausage. Cook for 3-4 minutes until the sausage is browned and heated through. Remove the sausage and set aside with the chicken. - Sauté Garlic and Spinach:
In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add the spinach and cook for another 2-3 minutes until wilted. - Combine the Ingredients:
Return the chicken and sausage to the skillet, then add the cooked pasta. Stir well to combine. - Make the Creamy Sauce:
Add heavy cream to the skillet, and stir in the parmesan cheese. Let the mixture simmer for 2-3 minutes until the sauce has thickened. If the sauce is too thick, add a bit of reserved pasta water until you reach your desired consistency. - Season and Serve:
Season with salt and black pepper to taste. Serve the pasta warm, garnished with additional parmesan cheese if desired.
Notes
- You can use any type of sausage, such as Italian sausage or smoked sausage, in place of kielbasa.
- If you want extra veggies, you can add mushrooms or bell peppers to the mix.
- For a lighter version, substitute the heavy cream with half and half or a plant-based cream alternative.
