  • Author: Ellie
  • Total Time: 1 hour 20 minutes
  • Yield: 6-8 servings

Description

This hearty and flavorful Chicken and Sausage Gumbo combines tender chicken, spicy andouille sausage, and a medley of vegetables, all simmered in a savory broth. With a deep, rich flavor from the dark roux and a touch of heat from cayenne pepper, this gumbo is perfect for a comforting meal. Serve it over a bed of rice for the ultimate Creole experience.

Ingredients

  • Vegetable oil
  • All-purpose flour
  • Onion
  • Green bell pepper
  • Celery
  • Garlic
  • Andouille sausage
  • Cooked chicken, shredded
  • Chicken broth
  • Diced tomatoes
  • Dried thyme
  • Dried oregano
  • Paprika
  • Cayenne pepper
  • Salt and pepper
  • Cooked rice (for serving)
  • Chopped green onions (for garnish)

Instructions

  • In a large pot, heat the vegetable oil over medium heat. Add the flour and cook, stirring constantly, until the mixture turns a dark brown color, about 15-20 minutes.
  • Add the onion, bell pepper, celery, and garlic to the pot. Cook for 5 minutes, until the vegetables start to soften.
  • Add the andouille sausage, chicken, chicken broth, diced tomatoes, thyme, oregano, paprika, cayenne pepper, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1 hour.
  • Serve the gumbo over cooked rice and garnish with chopped green onions.

Notes

  • The dark roux is essential for the rich flavor of the gumbo. Be patient while cooking it, as it may take some time to reach the right color.
  • You can use store-bought rotisserie chicken for a quicker prep time.
  • For a more intense flavor, let the gumbo simmer for longer than an hour.
  • Adjust the cayenne pepper to suit your heat preference.
