  • 2 boneless, skinless chicken breasts, diced

  • 2 cups broccoli florets (steamed or blanched)

  • 3 cups cooked pasta (penne, rotini, or spaghetti work well)

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • ½ cup grated Parmesan cheese

  • 1 cup heavy cream (or half-and-half for a lighter version)

  • Salt and pepper, to taste

  • ¼ teaspoon red pepper flakes (optional for heat)

  • Fresh parsley (optional, for garnish)


Instructions

  1. Cook the Pasta:

    • Cook the pasta according to package instructions, then drain and set aside.

  2. Cook the Chicken:

    • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast and season with salt and pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

  3. Prepare the Sauce:

    • In the same skillet, add the remaining 2 tablespoons of olive oil. Sauté the minced garlic for 1 minute until fragrant.

    • Add the heavy cream to the skillet and bring to a simmer. Stir in the grated Parmesan cheese, and continue stirring until the cheese is melted and the sauce thickens, about 3-4 minutes. Season with salt, pepper, and red pepper flakes (if using).

  4. Combine the Ingredients:

    • Add the cooked chicken, broccoli florets, and cooked pasta to the skillet. Toss everything together to coat in the creamy sauce.

  5. Serve and Garnish:

    • Serve immediately, garnished with fresh parsley if desired.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.

  • You can substitute other vegetables like spinach or peas for the broccoli if preferred.
