- 4 cups thinly sliced potatoes
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese, to sprinkle on top
Instructions
- In a small saucepan, melt butter and blend in the flour.
- Let this sit for a minute to thicken slightly.
- Add all the cold milk, stirring with a whisk to combine.
- Season with salt and cayenne pepper.
- Cook the sauce on low heat, stirring occasionally, until smooth and boiling.
- Reduce heat and stir in the grated sharp cheddar cheese until melted and smooth.
- Place half of the sliced potatoes in a lightly greased one-quart casserole dish.
- Pour half of the cheese sauce over the potatoes.
- Repeat with the second layer of potatoes and cheese sauce.
- Sprinkle the remaining cheese on top.
- Bake at 350°F for one hour or until potatoes are tender and the top is golden brown and bubbly.
Notes
- For an extra cheesy topping, you can add more cheese on top in the last 10 minutes of baking.
- Feel free to add herbs like thyme or rosemary for added flavor.
