  • 4 cups thinly sliced potatoes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1 dash cayenne pepper
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated cheese, to sprinkle on top

Instructions

  • In a small saucepan, melt butter and blend in the flour.
  • Let this sit for a minute to thicken slightly.
  • Add all the cold milk, stirring with a whisk to combine.
  • Season with salt and cayenne pepper.
  • Cook the sauce on low heat, stirring occasionally, until smooth and boiling.
  • Reduce heat and stir in the grated sharp cheddar cheese until melted and smooth.
  • Place half of the sliced potatoes in a lightly greased one-quart casserole dish.
  • Pour half of the cheese sauce over the potatoes.
  • Repeat with the second layer of potatoes and cheese sauce.
  • Sprinkle the remaining cheese on top.
  • Bake at 350°F for one hour or until potatoes are tender and the top is golden brown and bubbly.

Notes

  • For an extra cheesy topping, you can add more cheese on top in the last 10 minutes of baking.
