2 lbs baby potatoes, halved or quartered

2 tbsp olive oil

1 packet ranch seasoning mix

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 tsp garlic powder

Salt and pepper, to taste

2 tbsp chopped fresh parsley (optional)
Instructions

Preheat your oven to 400°F (200°C).

In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, salt, and pepper.

Spread the seasoned potatoes in a single layer on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, tossing them halfway through.

Sprinkle the shredded cheddar and Parmesan cheese over the potatoes, and return them to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Notes
For extra flavor, you can add a sprinkle of bacon bits before serving.
If you prefer crispier potatoes, broil them for 1-2 minutes at the end.
