Description

  • 2 lbs baby potatoes, halved or quartered

  • 2 tbsp olive oil

  • 1 packet ranch seasoning mix

  • 1 cup shredded cheddar cheese

  • 1/2 cup grated Parmesan cheese

  • 1 tsp garlic powder

  • Salt and pepper, to taste

  • 2 tbsp chopped fresh parsley (optional)


Instructions

  • Preheat your oven to 400°F (200°C).

  • In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, salt, and pepper.

  • Spread the seasoned potatoes in a single layer on a baking sheet.

  • Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, tossing them halfway through.

  • Sprinkle the shredded cheddar and Parmesan cheese over the potatoes, and return them to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

 

  • Remove from the oven, garnish with fresh parsley (if using), and serve hot.

Notes

For extra flavor, you can add a sprinkle of bacon bits before serving.

If you prefer crispier potatoes, broil them for 1-2 minutes at the end.

This recipe can also be made with larger potatoes; just cut them into smaller pieces and adjust the cooking time.
