  • 1 lb (450g) Italian sausage meat (mild or spicy)
  • 4 servings of pasta (we used farfalle pasta)
  • 2 garlic cloves, peeled and roughly chopped
  • 7 oz (200g) cherry tomatoes, roughly chopped
  • 1 handful of fresh spinach
  • 2 tablespoons tomato puree
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon black pepper

Instructions

  • Cook the Pasta: Begin by boiling water in a large pot. Cook the farfalle pasta according to package instructions, drain, and set aside.
  • Cook the Sausage: In a pan, heat olive oil over medium heat. Add the Italian sausage meat and cook, breaking it apart as it cooks, until browned and cooked through.
  • Sauté the Garlic: Add the garlic and sauté for another 1-2 minutes until fragrant.
  • Add Vegetables and Seasoning: Stir in the chopped tomatoes, spinach, paprika, cayenne pepper, chili flakes, and black pepper. Cook until the spinach wilts and the tomatoes soften.
  • Combine with Pasta: Add the cooked pasta and tomato puree into the pan with the sausage mixture. Stir to combine, ensuring everything is well-coated.
  • Prepare the Wraps: Lay out large tortillas and spoon the cheesy sausage and pasta mixture onto each one.
  • Add Cheese: Top each wrap with shredded cheese of your choice (mozzarella works great for melty results).
  • Wrap and Serve: Fold the sides of the tortilla in and roll it up to form a wrap. Heat the wraps in a dry pan for 1-2 minutes on each side until golden and the cheese is melted inside.

  • Serve and Enjoy: Slice and serve with a side of your favorite dipping sauce or salad.

  • You can add extra veggies like bell peppers, onions, or zucchini for added flavor and nutrients.
