Prepare the Marinade: In a mixing bowl, combine soy sauce, hoisin sauce, honey, Chinese rice wine, oyster sauce, sugar, five-spice powder, garlic powder, ginger powder, sesame oil, and red food coloring (if using). Stir well until the sugar is dissolved and the marinade is smooth.

Marinate the Chicken: Place the chicken pieces in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure it is fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
